You’re dying to feast on delicious homemade ice cream, but you do not want to invest in an ice cream maker? Never mind! With our original ideas and super easy, you will be able to fill your freezer sorbets, and all that without ice cream … Glazed lollipops, granita, perfect and frozen puffs … You did not know it yet, but just a freeze to have more than one trick in his bag!

Often colorful, always deliciously fruity, refreshing for sure, and much less caloric than its cousin ice cream … the sorbet is a mixture of water and sugar, including at least 25% fruit, hence a high vitamin content much more important than classic ice cream. Sorbet is the summer friend of those who watch their line. And what’s more, it’s easy to make yourself, with or without an ice cream maker!

How to make a sorbet without an ice cream maker?

If you do not have an ice cream maker? Well, we can very well make sorbets anyway! The technique will be longer, but the result will prove equally good.

Ingredients
500 g of fruit (pitted and/or seeded)
The juice of 1/2 lemon
100 g of sugar
1 egg white Sorbet

cream maker Mix the fruit with the lemon juice, mix with the sugar and place in a freezer bin. When the mixture is cold, take it out of the freezer and mix for a long time with an egg white until you get a foamy texture of sorbet. Then put back in the freezer.

You can make sorbets with all kinds of fruits (and even some vegetables), and create original flavors.
Remember to add spices (black chocolate sorbet chili tip for example), aromatic herbs (strawberry-basil, lemon-mint for example), scented syrups, etc.

Tips for making your ice cream without an ice cream maker

To prevent your ice from hardening, you can use an ice stabilizer.
If there are ready-to-use chemicals (available at specialty food stores), you can easily use ingredients that are easy to keep in our cupboards. For a creamy consistency, you can add to your preparation:
– a tablespoon of Maïzena or corn starch or cornflower or pastry cream powder, at the end of cooking; – 2 egg whites. Add the first snow-white and mix well, and once incorporated, add the second white just made.

Ideas for pumping your ice cream
> Replace the water with the same amount of semi-skimmed milk, milk-strawberry, but be careful, keep them in your freezer for less time. Vary the pleasures using coconut milk or almond, sweet to taste. 
> Turn fruit juice (apple, orange, grape) into an ice-cold version. 
> Have fun preparing lollipops by using directly flavored yogurt or a fruit sweet. 
> To make it taste like cola, remember to let it degass, to prevent lollipops from spilling into the freezer! 
> For grown-ups, you can also think of iced tea and coffee, to be taken in the same way.

The perfect frozen, recipe without ice cream maker

The most traditional recipe to make without an ice cream maker is that of the frozen parfait. With whipped cream and egg yolk, it’s air and alcohol – in a small amount, about 1 tbsp. soup-which prevents him from becoming too compact in the freezer. 
It can be perfumed with vanilla extract or bitter almond, add acai powder to give it a fruity color, avoiding the use of fruit purées, too watery.

How to make a perfect iced without an ice cream maker? 
Ingredients (for 6 people) 
– 3 egg yolks 
– 100 g icing sugar 
– 50 cl whole cream 
– 2 tbsp. coffee extract 
– 1 tbsp. Bailey’s or Kalhua (coffee liqueur) 

Preparation of the ice cream parfait without an ice cream maker
– Reserve the cream and beater whips in the freezer for 15 minutes, so that they are cold. 
– Beat the egg yolks and sugar until the mixture is foamy and white. Add coffee extract and Bailey’s or Kalhua, beat again.
– In a large salad bowl, beat the whipped cream. Add one-third of the whipped cream to the egg mixture, mix gently with a silicone spatula. 
– Then pour this preparation into the rest of the whipped cream and mix by lifting the mixture well. 
– Pour into a silicone cake mold (if not, a metal mold lined with a stretch film) and reserve in the freezer for at least 12 hours. 
– Remove the mold from the freezer 10 min before serving, unmold and cut the perfect slices.

Ice cream mousse with blender

If you do not have an ice cream maker but you have a blender on hand, you’ll fall for the express red fruit ice cream. A super fast dessert recipe! 
Mix 200 g frozen red berries – directly at the freezer – with 4 tablespoons cottage cheese and 2 tablespoons sugar. This gives a creamy and creamy frosty mousse that will make you bloom with happiness! 
For lack of mussels, consider using pots of small Swiss fruit in which you will plant a spoon when the ice will be half taken.

Pour the liquid of your choice into a large metal dish, place in the freezer then scrape the surface every hour to make glitter. The liquid should be as in contact with the cold as possible: take your largest dish, so that the liquid layer is thin so that the granite takes quickly.

Ingredients
500 g of fruit (pitted and/or seeded) 
the juice of 1/2 lemon 
100 g of sugar 
25 cl of water 

Preparation of sorbet with ice cream maker
Make a syrup by boiling water and sugar, let simmer 1 min, then cool completely. 
Mix the fruit with the lemon juice, mix it with the cooled syrup and place in an ice cream maker between 45 minutes and 1 hour.

How do you choose your ice cream maker? 
An ice cream maker consists of a tray and a turbine that will lower the temperature of a preparation while avoiding the formation of crystals. 
There are 3 types of ice cream makers, with more or less sophisticated refrigeration systems: 
> Single ice cream maker: Consisting of a turbine and a tank, to be placed in the freezer in direct contact with the wall. First prize at 20-25 € 
> Ice cream maker: Works with a cold disc that is placed in advance in the freezer. Once the disc is frozen (count 18 to 24h), it is placed at the bottom of the ice cream maker: the cold will spread at the time of the turbinage. From 45 €.
> Standalone ice cream maker: Has its own refrigeration system. Between 150 and 500 €. 
And be careful of the capacity of the tank! Take a tank of 1 L, 1.5 L minimum (or you will not be able to taste your delicious homemade ice cream to your guests …).
